Just made some protein-packed banana bread which smells AND tastes so good!
I adapted from Espresso & Cream’s recipe
Ingredients*3 medium ripe bananas, mashed ( I left the mash kindof chunky and the little banana bits in the slice gave a nice texture)*3 tablespoons Olivio coconut spread*1/3 cup 0% Greek yogurt*1 and a half scoops of vanilla-flavored protein powder*1/4 cup no-calorie natural sweetener (I used Ideal)*1/4 cup no-calorie natural brown sweetener (again, I used Ideal, brown sugar variety)*1/4 cup egg whites*1 teaspoon baking soda*1/4 teaspoon salt*2 teaspoons vanilla extract*2 teaspoons ground cinnamon, divided*1/4 cup ground flax meal *1 1/4 cup cups unbleached whole-wheat flour*2 tablespoons natural almond butter*2 tablespoons vanilla flavored soy milk (I used Silk Vanilla Light)*2 tablespoons rolled oats
Instructions*Preheat oven to 350°F. Line a 9x5-inch loaf pan with aluminum foil (or spray with Pam, as I did); set aside.*In a large bowl, beat together the bananas, butter, yogurt, protein powder, sugar, brown sugar and egg whites. Beat until well combined. Add in baking soda, salt, vanilla extract, 1 tsp cinnamon and flax meal. Stir until combined.*Beat in flour until just combined. Reserve 1/2 cup of the batter. Transfer remaining batter to loaf pan. Stir almond butter and milk into the reserved batter and stir until combined. Spread peanut butter batter atop batter in loaf pan. Run a knife through to evenly distribute peanut butter batter layer. Sprinkle top with remaining teaspoon of cinnamon and the rolled oats.*Bake for 50-60 minutes, until golden brown on the surface. Transfer to a wire rack to cool.
A 1 inch thick slice has:
180 calories / 6g fat / 0g sat fat / 0g cholesterol / 5g fiber / 6.5g sugar / 8.9g protein
the smell alone of it baking is enough to satisfy
